Check out this great cauliflower side or snack!

  • head of cauliflower
  • 1 zucchini, chopped
  • 2 tomatoes, chopped
  • 1 onion, finely chopped
  • 2 cloves garlic, pressed
  • 1 Tbsp coriander
  • freshly ground black pepper
  • 1 Tbsp coconut oil
  • 1-2 Tbsp fresh oregano, chopped
  • olive oil for drizzling

Break cauliflower into florets. Put cauliflower, onion, garlic, zucchini, tomato, coriander, black pepper, and coconut oil into a bowl. Toss well and transfer to a baking sheet. Bake at 350 degrees for 20 minutes. Remove from the oven, drizzle with olive oil and toss with fresh oregano. Serve.
