Caesar Salad

Salad recipe to serve four.

  • 2 heads romaine
  • 2 tablespoon of dijon mustard
  • 1 egg yolk
  • 4 anchovies
  • 1 clove garlic
  • juice of half a lemon
  • 2 tablespoons of apple cider vinegar
  • 1/4 cup grated parmesan
  • 1/2 cup of olive oil
  • 1 tsp coconut aminos
  • 1/2 teaspoon sea salt

Mash minced garlic anchovies and sea salt together. Add vinegar, lemon juice, aminos, mustard and olive oil. Whisk together, set aside. slice romaine or halve and grill. Toss or drizzle over lettuce and serve immediately. Top with cheese and make gluten free croutons or flax crackers.
